A hearty, healthy salad is one of the most satisfying warm-weather dinners.
This salad is full of crisp lettuce, crunchy veggies and peanuts, and spicy Asian flavor. The combination of radishes, sugar snap peas, cucumbers and peanuts is just a little bit unique, and tastes incredibly fresh.
I found this recipe on Bon Appetit and knew that I had to make it as soon as possible. It didn’t disappoint. I served this for Easter dinner with sirloin steaks and a beer quick bread for a hearty meal, but this salad could easily be a meal on its own- just add some protein as per the original recipe.
This salad is not only delicious, but wonderfully healthy. You will feel good after eating this, I promise!
Ingredients
dressing:
1/3 cup rice vinegar
2 tablespoons sweet chili sauce
1 tablespoon sambal olek
1 tablespoon soy sauce
salad:
1/4 cup raw peanuts, chopped (fry in oil if you like)
8 oz sugar snap peas, cut in half
1 head butter lettuce, leaves separated and torn into bite sized peices
1 cucumber, sliced very thin
5 radishes, sliced very thin
5 scallions, thinly sliced
Instructions
1. Make the dressing: mix all of the ingredients together with a fork. Set aside.
2. Toss the veggies in a large bowl. Sprinkle peanuts over the top, and drizzle with dressing.
